Tea Ceremony

The first mention of tea (cha) in Japan dates to 729, but it spread in the late 1100s to Zen monasteries, where monks drank it during their long meditations (zanzen). Chanoyu (also sado or chado -- the way of tea) began during the Kamakura period (1185-1333), but has been refined over the centuries into a highly ritualized ceremony where every gesture has meaning. You don't have to become a tea master to appreciate the beauty of a tea ceremony, however, and the books below are a good place to start.
